Galette
A galette is a free-form, open-faced pie: a single round of pastry with the filling in the middle and the edges folded roughly over it.
No dish, no lid, no crimping. The pleated border holds the filling in, and everything bakes flat on a tray, which makes the galette the least intimidating pie there is.
Savory chicken galettes work best with drier fillings, since there are no walls to hold back a runny sauce.
