Raised pie

A raised pie is a tall, free-standing pie with hot water crust walls, shaped by hand or around a mold rather than baked in a dish.

The name records the technique: the warm pastry is literally raised up into walls. Once filled and lidded, the pie holds its own shape through baking and is usually eaten cold, in slices.

The chicken and ham raised pie, with its layer of jelly under the lid, is one of the grand set pieces of British cold-table cooking.
