Why refreezing is a bad idea

Every thaw gives bacteria a window to multiply, and freezing pauses growth rather than reversing it. A pie that has already been through one thaw carries whatever bacterial load it picked up, and a second freeze and thaw compounds it.

Quality suffers just as much as safety. Ice crystals rupture the structure of the sauce, so a refrozen filling often thaws watery and split, and the pastry turns damp and leathery.

Freezer burn compounds over repeated freezes as well. Each trip through the freezer draws more moisture from the surface, so a twice frozen pie tends to emerge with a dry crust and a grainy, separated sauce even before safety enters into it.

The narrow exception

Some guidance allows refreezing cooked poultry if it has been thoroughly reheated to 74C (165F) throughout, because the reheat kills bacteria that grew during thawing. Even then, the pie can only be reheated once more before it must be eaten or discarded.

In practice this is rarely worth it for a pie. The pastry will not survive two freezes with any dignity, so treat refreezing as a last resort and plan not to need it.

Shop bought frozen pies are no different. Once the packet has thawed, follow the instructions on the label, which almost always say cook and eat, and do not refreeze.

How to avoid the problem

The easiest fix is portioning before the first freeze, so you only ever thaw what you will eat. Small portions also defrost overnight in the fridge, where a whole family pie can take a full day.

  • Freeze individual slices or hand pies rather than a whole pie
  • Freeze the filling and raw pastry separately, then assemble fresh
  • Label everything with the freezing date and use within 3 months
  • Thaw in the fridge overnight and eat within 24 hours of defrosting
