How many days is leftover chicken safe in a pie?
Leftover cooked chicken is safe to use in a pie for up to 3 days after it was first cooked, provided it was refrigerated within 2 hours and kept at 5C (41F) or below. Baking it into a pie does not reset that clock, and the finished pie should then be eaten the same day.

The 3 day rule
Cooked poultry keeps for 3 days in the fridge, counting from the day it was first cooked. A chicken roasted on Sunday can safely go into a pie baked on Tuesday, but by Thursday it should be in the freezer or the bin.
The chicken must also have been handled well in between: cooled within 2 hours of cooking, stored covered in the fridge, and not left out on the counter during carving or sandwich making sessions.
Freezing is the escape hatch. Cooked chicken frozen within the 3 day window keeps for up to 3 months, thaws overnight in the fridge, and should then be used within 24 hours, which is exactly enough time to bake it into a pie.
Baking does not reset the clock
It is tempting to think that baking the pie to 74C (165F) makes old chicken new again. It does not. Heat kills bacteria, but some produce toxins as they grow that survive cooking, so time in the fridge counts regardless of how thoroughly the pie is baked.
Baking the chicken into a pie also uses up its one reheat under the reheat once rule. Eat the pie the day it is baked, refrigerate any leftovers within 2 hours, and treat a further reheat of those slices as the absolute end of the line.
