How to blind bake a pie base step by step

Why bake an empty pie
A chicken pie filling is essentially hot, wet sauce, and raw pastry underneath it cooks slower than the filling releases moisture. Blind baking flips the order: the base sets, crisps, and waterproofs itself before the filling ever arrives. For any single-crust pie with a saucy filling it is the single most effective insurance against a soggy bottom.
The weights are not optional. Without them, steam puffs the base into a dome and the walls slump down the sides of the dish. Ceramic baking weights work best because they conduct heat into the pastry, but dried beans, rice, or even sugar do the same job.
Step by step
Start with a lined, chilled pastry case. Cold pastry going into a hot oven is what keeps the walls upright.
- Heat the oven to 200C (400F) with a baking sheet inside so the base gets direct heat from below.
- Prick the chilled pastry base all over with a fork to let steam escape.
- Scrunch a sheet of baking paper into a ball, unfold it, and press it into the case. Scrunching makes it flexible enough to sit into the corners.
- Fill generously with baking weights, pushing them out to the edges where the walls need the most support.
- Bake on the hot sheet for 10 to 15 minutes until the visible rim is set and just colouring.
- Lift out the paper and weights carefully.
- Return the case for 5 to 10 minutes until the base looks dry, matt, and pale gold with no grey, greasy patches.
- Brush the hot base with beaten egg and give it 1 more minute to set into a waterproof glaze.
Reading the base
The base tells you when it is done. Raw pastry looks damp and translucent; finished pastry looks dry and opaque, like a digestive biscuit. If in doubt, give it two more minutes, because a slightly deep colour is a far smaller problem than an undercooked one.
Let the case cool for a few minutes before adding a hot filling, and never add a hot filling to a case you intend to hold overnight. The egg wash seal buys hours, not days.
