Chicken Pie for Two

Ingredients
- 2 skinless boneless chicken thighs, about 250g, diced
- 1 small leek, sliced
- 1 small carrot, finely diced
- 20g butter
- 20g plain flour
- 250ml chicken stock
- 2 tbsp double cream
- 1 tsp chopped thyme
- 160g puff pastry, half a ready rolled sheet
- 1 egg, beaten, for glazing
Method
Melt the butter in a saucepan and cook the leek and carrot for 5 minutes until softening.
Add the chicken and thyme and cook for 5 minutes until the chicken is sealed.
Stir in the flour, cook for 1 minute, then gradually add the stock, stirring to a smooth sauce, and simmer for 4 minutes.
Stir in the cream, season, then transfer to a 600ml pie dish and cool for 10 minutes.
Top with the pastry, trim, press the edge onto the rim, cut a steam vent, and brush with beaten egg.
Bake at 200C (400F) for 25 minutes until puffed and golden, then rest for 5 minutes.
